Smoker Preparation
I used my Weber Kettle for this spicy smoked Chex Mix recipe. The Kettle is perfect for these short smokes and this recipe is no different. I am a Weber and you can do this Chex mix on WSM as well but if you want to do this smoked Chex mix on your Trager, Pit Boss or some other style, go for it, the recipe should translate with no issues. Get your smoker up to 250°, I used B&B lump and some hickory wood for this recipe. The hickory is a great complement to the spice we will be using.
Spicy Smoked Chex Mix Recipe
While our smoker is getting up to the desired temperature, we can start pulling the recipe together. A quick note for this recipe, I did a smaller batch for this run, so if you are going to do more you will want to adjust the recipe proportionally. I started out with 3 cups of Chex Party Mix. You can choose to use any variety of Chex snack mix, whether it is rice Chex, corn Chex or some other Chex cereal. The pretzels in this mix help make it for the perfect snack. Measure that out, place it in a large mixing bowl and put it off to the side.
The next items we will need are some butter, we are going to use 4 tbsp. of butter (1/2 a stick of butter) and then 4 tbsp. of brown sugar. We are going to place those in a pot and melt the butter and sugar together. Now that you have those combined and melting, make sure you stir on occasion, start pulling your other spices together in a separate bowl.
Here are the remaining dry items for this Chex Mix ingredients list: 2 tsp. of salt (I used Himalayan seasoned salt), 1 tsp. of garlic powder, 1 tsp. of white sugar, 1/2 tsp. of cayenne (I would highly suggest not going more than this unless you are going to increase the overall servings) and 1/2 tsp. of paprika.
Mix all of this into a bowl and set aside. At this point your butter and brown sugar should be melted. When that is ready, take the liquid and pour over the Chex Mix in the bowl. I would pour it incrementally, to ensure full coverage. I would stir and pour and continue doing that until you have used what you have.
Once coated with the butter and brown sugar mixture we will do the same with the spices. Again I would do this incrementally, to ensure proper coverage on all the Chex Mix. Continue to pour and stir the Chex Mix until you have used the spice mix. With that now done, transfer into a foil tray and the smoker should be ready to go.
Time To Smoke Our Spicy Smoked Chex Mix
Take your foil tray and we will place the Chex Mix on the smoker. Since there is not temperature that we need to track we will simply do this by time. If you are at 250 ° you will only need to keep the mix on the smoker for 1 hour. About half way through stir the Chex Mix so we can ensure all of the mix gets some smoke flavor on it. After an hour you can pull it. I would suggest giving it some time to cool down. There is nothing saying you cannot serve while hot but my preference is to let it cool before serving.
I hope you love this spicy smoked Chex Mix recipe, as did your guests. If you are looking to store this, you can keep it in an airtight container for a couple of days but I can promise it won’t be around that long!
