What Is Needed For The Vegetable Medley
To start out, we need to marinade the vegetables. We keep this simple, a bottle of Italian dressing is all we will need to marinade the veggies. A larger 16 oz. bottle should be all you need but that will also hinge on how many vegetables you use. So let’s start talking about the vegetables.
For vegetables, I like to use mushrooms, tomato’s and some zucchini. The great part of this is you can really mix it up however you want. Some other great options you can add or substitute in are onions, peppers, yellow squash. Personally grilled mushrooms are some of the best. I used them in this simple chicken and mushroom dish that is absolutely delicious. Another delicious meal that is simple to make and sacrifices nothing in the flavor department.
So for this recipe, I used a zucchini, which I sliced into about 1/4-1/2″ slices. I left the skin on. I also used cherry tomato’s, which I just rinsed down and did not else too. The mushrooms, I wiped them down with a damp paper towel to clean them off and then left them whole.
Once the vegetables are prepped, place them in a resealable bag, add in the vegetables and then marinade. Place in the refrigerator and let the vegetables sit for about 2 -3 hours. I would lay the bag flat, and flip on occasion.
Grilling The Vegetables
Get the grill up and running for about 400°. When grilling a large number of vegetables likes this, your best bet is to do it in a grilling basket. When the grill is ready, go ahead and throw the veggies on. I would suggest draining any dressing before putting the vegetables in the basket. We are going to grill these over direct heat.
After the vegetables are on, there is not much you need to do. Stir on occasion, every 5-10 minutes will work. They will certainly get burnt and stuck to the basket if you do not keep it all moving. I would not sweat worrying about some vegetables taking longer than others, that has never been an issue.
Get some char on them, all to your liking. Less char and you might be done closer to 30 minutes, more and you are looking more at 40-45 minutes. When they are done, pull them off an serve hot!

Delicious Vegetable Medley On The Grill

Ingredients
- 16 oz of Italian dressing
- 1 green zuchinni
- 1 pint of cherry tomatos
- 24 oz of white mushrooms
Instructions
- Slice the zucchini 1/4" - 1/2" thick and clean the mushrooms (leave whole)
- Rinse the tomato's
- Place the zucchini, mushrooms and tomatoes in a resealable bag
- Add the dressing, close the bag and place in the regfrigator
- Rotate the bag on occasion keep in the regfrigator for 2-3 hours
- Get your grill up and running for 400°
- Place the vegetables in a grilling basket, and start grilling over direct heat
- Rotate the vegetables every 5-10 minutes. You need to keep them moving because they will get burned.
- Once you have the char you like, you can pull them off to serve
