Super Easy Chicken and Mushroom Mariande

For starters, use chicken thighs for this recipe. When it comes to quick and easy meals, they are the best because they have more flavor then chicken breasts and are more forgiving for hotter and faster cooks. You can trim some of the extra fat and skin off the thighs but you don’t have to go crazy, its all good stuff if you leave it there. I also did this recipe, maybe you figured it out already, with boneless and skinless thighs.

Now to the marinade, it is simply going to be some Italian dressing. Nothing more and nothing less! A great blend of flavors that when marinating the chicken makes this for a easy and delicious meal. The dressing is a great compliment to both the chickens and mushrooms in this recipe. If you have never grilled mushrooms, this is a great way to start and I promise you will not be disappointed.

In addition to the boneless and skinless breasts, we are going to use some whole white mushrooms. As with the chicken, this is a simple and budget friendly vegetable side dish. To prepare the mushrooms, the only thing you need to do is wipe them down with a damp paper towel and they are ready to marinate.

Depending on how much chicken and mushrooms you are using, you may be able to marinade it all together, or if you are using a larger bag, like a 2 gallon bag. I ended up using 2 one gallon bags, one for the chicken and one for the mushrooms. We are going to marinade this for 4-5 hours in the regfrigator. I would say 4-5 hours is the minimum, if you can get upwards of 6-8 hours even better. I would suggest rotating the bags on occasion, maybe every hour. The mushrooms especially will probably not be fully submerged in the dressing so you definitely want to keep them moving around and getting rotated.

After marinating there is nothing else to be done, it will just be a matter of throwing everything onto the grill, so let’s get moving to that next step.

Grilled Chicken and Mushrooms

I used my gas grill for this recipe, its a relatively quick cook so it was faster to do it on the gas grill. It would take almost as much time to get the charcoal going and the Kettle up to temperature as it does to grill the chicken and mushrooms. Now, with that being said, feel free to grill this recipe on whatever grill you have or want. The process should not vary much, if at all.

Prepare the grill for direct heat for both the chicken and the mushrooms. The chicken we will cook directly on the grate, and the mushrooms, I used a grilling basket. We are looking for some high heat and will grill at a temperature of 450°.

The mushrooms will take a little longer than the chicken so you can either get them started sooner or let them grill a little longer than the chicken. With the chicken, over direct heat, grill for about 10 minutes on each side. Thighs can finish at a higher IT than breasts so if you go upwards of 175°, you are still going to get juicy chicken thighs, with a little bit of char on them. After you hit the minimum IT of 165°, you can pull them and let them rest for 10 minutes.

The chicken can just grill, keep the lid closed as much as you can. The mushrooms will need to be stirred on occasion so they don’t burn or get stuck to the basket. The mushrooms should take about 25 minutes, chicken only about 20 minutes. Since there is no IT, for the mushrooms, we are going to just grill by the look. I like a little char on them but not too much. Grilling mushrooms brings out so much flavor, combined with the dressing marinade, these make for an incredibly delightful side dish. Even our kids get excited for the grilled mushrooms. After about 25 minutes, the mushrooms should be done and ready to serve while hot.

When done, this meal is ready to go. Super easy and delicious. Not too much to do after the fact. You can add some cilantro or parsley to the chicken, maybe some BBQ sauce but this should not be lacking any flavor. Our kids are happy eating the chicken sliced and with the mushrooms on the side.

Ingredients

  • 3 lbs. boneless and skinless chicken thighs
  • 20 oz. whole white mushrooms
  • 24 oz. Italian Dressing

Instructions

  1. If you desire trim off some off any of the large pieces of skin or fat. If you choose not to, that will not present an issue for the cook.
  2. Take a damp paper towel and brush off the mushrooms and leave whole.
  3. Place the chicken thighs and mushrooms in resealable bag(s) depending on the amount of chicken and mushrooms and size of the bags, then pour in the dressing
  4. Marinade for a minimum of 4-5 hours but 6-7 is even better.
  5. Before you finish marinating get the grill up and running. We are going to cook over direct heat and will do so at a temperature of about 450°.
  6. When the grill is up to the desired temperature of 450°, we will put the chicken and mushrooms on.
  7. Place the thighs on the grate, dump the mushrooms into a grilling basket, keeping the whole and close up the grill.
  8. Stir the mushrooms every few minutes, you will not want them burning or getting stuck to the basket.
  9. The chicken, grill about 10 minutes on each side. You can pull as low as 165° but as a reminder, thighs can easily handle a higher IT, upwards of 175°
  10. The mushrooms will need about 25 minutes, the thighs no more than 20 minutes.
  11. After the thighs are done, let them rest about 10 minutes, while the mushrooms are wrapping up
  12. Serve as soon as everything is ready!
