This chicken on a stick recipe is a simple recipe and awesome on the taste buds. It takes the natural flavor of the chicken thighs, a great marinade and tops it off with a smooth bourbon glaze. Once your marinade is done, you will have this meal ready in less than 2 hours. This chicken on a stick recipe can work as a an appetizer or as a main dish.
Chicken On A Stick Recipe Marinade
Prep on this is easy, you are going to get your smoker going up to 275°, using the wood of choice. I went with some hickory with this recipe and used B&B Char logs for the charcoal.
First thing we need to do is start with the marinade for this chicken on a stick recipe. You are going to need the following for the marinade recipe:
- 4 tbsp. brown sugar
- 1/4 cup of bourbon
- 1/2 cup Worchester sauce
- 1/2 cup of olive oil
- 1/2 tsp. of cayenne pepper
Combine all of these ingredients into a bowl and then we are going to add the combined ingredients to a Ziploc bag and then add in the chicken. You are going to use boneless skinless chicken thighs. You could use chicken breasts but the thighs tend to hold up better and retain some natural flavor and just in general have more than flavor than chicken breasts.
Cut off any large excess pieces of fat, do not get too aggressive, we want some fat left on the thighs. After having removed some of the larger pieces of fat we are going to start cutting the thighs into cubes. Once the chicken is cubed get it all in the bag with the marinade. You are going marinade the chicken for about 3-4 hours. You can go longer, its rare more time in a marinade is bad.
I usually use wooden skewers, if you do the same, make sure to take some time and soak them in water so they do not burn up on the grill. If you do not get to soaking them, if you are on the top rack of your WSM, the skewers burning up should not be an issue.
Once you have the chicken cubed we are going to put them off to the side and start to work on our bourbon glaze for the chicken. We are going to need the following ingredients for the glaze:
- 1/4 cup of honey
- 1/8 cup of orange juice
- 2 tbsp. of brown sugar
- 1 tbsp. of butter
Now that you have gathered the ingredients for the glaze, we are going to let them simmer on the stove until combined. If you did not already put the meat on the skewers then do that now. After you have the chicken on the skewers we are going to coat the chicken on a stick with the glaze. I would suggest turning the sticks with the meat to ensure you are getting good coverage of the meat, with the glaze.
With the glaze now on, we are ready to get the chicken on the smoker.
Chicken On A Stick Recipe: Smoking The Chicken
Place the chicken on the smoker, again in my case I did this on my Weber Kettle. You are going to leave them on for about 1 hour. If you are doing on this on the Weber Kettle and the chicken is a little closer to the heat source you may want to rotate them. if you end up doing this on something like a WSM, you are ok leaving them without rotation. Around half way through I will coat them again with the glaze and at that point I may naturally turn them just to get some good coverage with the glaze.
After another 30 minutes, do a temperature check. This may not be easy because the pieces of meat are smaller but find the largest piece and see where the internal temperature is. You want to ensure it gets to 165° IT before pulling. As soon as you hit that internal temperature reading of 165°, go ahead and pull those sticks off the WSM and serve while hot.
These make for a great meal if you have some sides ready to go or you can put these out for an appetizer. Either way the adults down to the kids will love these.

- 2 lbs. chicken thighs
Instructions
- Remove any excess fat from the chicken thighs ad cut the thighs into cubes
- Combine the ingredients for the marinade and place in a Ziploc bag
- Add chicken thighs and marinade for about 4 hours
- Mix the ingredients for the glaze in a pot and combine over low heat
- Remove after 4 hours and place on the skewers
- Glaze the thighs
- Place the thighs on the smoker at 275° using hickory wood
- About 40 minutes in coat with the glaze.
- Pull when chicken IT hits 165°, it should be about an hour on the smoker
