Pulled Pork Nachos Recipe

I am not going to go into how to smoke the pork but if you are looking for some instruction on how to do that, jump over here and see how I smoked a pork butt on my WSM.

For this recipe I used the following ingredients:

  • about 5 oz of smoked pulled pork
  • I then used 8 oz. of tortilla chips
  • Some sliced and pickled jalapenos
  • 1/4 of purple onion
  • 1/2 bunch of chives
  • 4 oz. of shredded white cheddar cheese (I used shredded cheese from a bag but if you have some freshly shredded white cheddar, go with that. You will get more flavor and it will melt a little better as well)
  • BBQ sauce of your choice. Sweet Baby Ray’s is usually what we have around here
We can limit the toppings on these smoked pork nachos because they are packed with flavor

Making Our Smoked Pork Nachos

First thing we are going to do is get the grill or oven up to a temperature of 400°. We are going to turn these nachos around pretty quickly. I made these in my cast iron skillet. if you don’t have a cast iron skillet a sheet pan will work as well. When it comes to cast iron, Lodge is the cream of the crop and one that I highly recommend. Check this one out here.

This is the first layer for our smoked pork nachos

I started by layering the chips in the skillet. After I got the first layer down, I added some pork, onions and jalapenos. I then took some of the BBQ sauce and put it in a Ziploc bag, cut the bottom corner of the bag so that I could drizzle out the BBQ sauce. Once that was done, I repeated those same steps 2 more times, getting 3 layers of chips and toppings.

Once that was done, I still have not added any cheese, I put the skillet on the grill. I left them in there for 3 minutes, giving the pork a chance to warm up a bit. After the 3 minutes, I took the skillet off and loaded up the cheese. I gave the skillet a little shake to get some of that cheese down to a lower layers.

Smoked pork nachos nearly done, just need to add some chives

Once the cheese was on, I put it back in for another 3 minutes until the cheese was melted. When I pulled the nachos, I then topped it off with some chives and got them out to serve.

Additional Nacho Toppings Ideas

These nachos are great and simple as is but if you are looking to add some other toppings here are some suggestions that would pair well:

  • cilantro
  • black beans
  • sour cream
  • salsa

Any combination of these will work. The black beans will for sure help beef these up if you are looking to make a meal out of these smoked nachos.
