You only need 5 ingredients for this candied salmon recipe:

  • 1 lb. of salmon
  • 8 pieces of bacon
  • 1/4 cup of honey
  • Sweet rub of choice
  • This part is optional: 1/2 cup BBQ sauce (I used Sweet Baby Ray’s)

With this simple set of ingredients, we are going to start making a delicious smoked appetizer.

Smoked Salmon Bites

Here are the quick steps for making these candied salmon bites!

  • For starters, get the smoker going. We are going to want hot and fast, so we get a some crisp on the bacon. 300-325° and some cherry wood adds a nice touch.
  • Next we are going to take our salmon and cube it. Approximately 1.5″x1.5″ cubes. If you are using frozen salmon, make sure its defrosted first.
  • Before we add the rub, we are going to then move onto the bacon. Start off slicing the bacon strips in half. Then wrap each slice of bacon around the salmon and secure it to the salmon with a toothpick.
  • After the salmon is cubed and wrapped in bacon, coat with your rub on all sides. Kinder’s Brown Sugar rub is a great option for this recipe.
  • By now the smoker should be running at our desired temperature and we can prepare to put these candied salmon bites on the smoker
  • Once you have them on close up the lid and let them smoke. When the bites get to an IT of 120° coat with some honey. If you need to spot check your IT, use the ThermoPro TP19H. Perfect for these smaller appetizers.
  • This next part of is optional if you want to add some BBQ sauce to the salmon, jump to the next bullet point. If you want to skip the BBQ sauce, finish the salmon at 145°.
  • If you are adding some BBQ sauce to the recipe, when the salmon gets to an IT of 135°, coat with some BBQ sauce and let finish. I quickly pulled off the smoker and tossed them in a bowl with the BBQ sauce.
  • As soon as the salmon hits and IT of 145°, you can pull them off the smoker, give them about 5 minutes to cool and you can start enjoying these!

Normally I would be concerned about the bites getting dried out but when combined with the bacon, honey and BBQ sauce these will stay very tender and juicy when biting into them. If you end up carrying a little past 145°, don’t sweat it, you should not have an issue.

As I mentioned above, you can add some BBQ sauce to these salmon bites and that can be done at the tail end of the smoke. Your other options are, and more easliy done if you have the BBQ sauce on them, add some sesame seeds or chives. Those may be some of your more traditional garnishes, also not too far off might be some grated parmesan cheese or another option if you want to add some more sticky sweetness to this, add a drizzle of some maple syrup on them.

Candied Salmon

Ingredients

Instructions

  1. Start off getting your smoker up and running. We are looking for 300-325° with a hint of cherry wood.
  2. While the smoker is getting up to temperature, start by slicing the salmon into cubes, approximately 1.5" x 1.5"
  3. Slice your bacon pieces in half, then wrap around the salmon
  4. Coat with a sweet dry rub, I used Kinder's Brown Sugar rub
  5. When done and the smoker is up to temperature place the bites on the smoker
  6. Smoke until 120° and then coat with some honey
  7. Continue to smoke until 145°, at which point you can remove, let cool enough to handle and enjoy!
  8. Optional: if you want to add some BBQ sauce at 130° and then smoke until 145°

Notes

Garnish with some chives, seasme seeds, or a drizzle of maple syrup
