We will use these mini sweet peppers for our stuffed peppers recipe

Stuffed Mini Peppers with Cream Cheese

We are going to use mini sweet peppers, you can get these in bags at Costco. They make for perfect presentation with the guests and taste amazing. We are going to start out by cutting the peppers in half and removing any seeds. While you are doing that, get your grill up and running and we are going to do this at high heat, about 500 degrees.

After having cleaned out the peppers, you are going to throw them on the top warming rack for 5 minutes. We are going to go with an indirect heat here. During that 5 minutes no need to do anything, we are going to warm the sweet peppers up, get a little bit of char on the bottom and then after 5 minutes you can pull them. For that short 5 minutes they are on, you can smell the peppers grilling. It gets your mouth watering!

After that 5 minutes you can go ahead and pull them off the grill.

How To Make Cream Cheese Stuffed Mini Peppers

Now that you pulled these off the grill we can lay the cream cheese filling on them. I used your basic Philadelphia Cream Cheese for this stuffed sweet pepper recipe. You will need about 1 tablespoon of cream cheese per pepper. Nothing fancy has to be done here, except lay the cream cheese into the pepper and maybe smooth it out a bit. Once that is done, you can one of two things.

Mini Stuffed Peppers, grilled and filled with cream cheese

The first is you can serve them as is, with the warm pepper and the cool cream cheese. The other option is to take the cream cheese stuffed peppers and place them back on the grill, at a lower heat for about two minutes and warm up the cream cheese. Place them again, on the top rack, drop your temperature down to about 300 and keep them on for another 2 minutes to warm up the cream cheese. After those two minutes go ahead and pull them off, they are ready.

How To Serve Cream Cheese Stuffed Mini Peppers

So the flavor of these mini sweet peppers is amazing. Add in the cream cheese and you have a fantastic blend to enjoy. So while these sweet peppers are small, they are packed with flavor. You can certainly serve them as is, I promise they will be loved just like this. Now if you wanted to add a bit more to them, I have made some bacon, chopped it up and added that to the peppers.

Another options is if you have a favorite dry rub, you can sprinkle some of that on there. I have used Kosmos Honey Killer Bee dry rub on these and it was a great addition to the peppers.

This next idea, as I mentioned above is really a “can’t go wrong” kind of option. Get some bacon, cook it, crumble it and throw it on the cream cheese stuffed mini peppers. As we all know, bacon goes well with just about anything.

You can also dress these up with some green onions, garlic powder, goat cheese or shredded cheddar cheese. Any of these options will work or any other kind of spices of seasonings you may prefer.
