BBQ Chicken Thighs Marinade

This marinade is enough for about 3 lbs. of chicken thighs. We are only going to need five fairly basic ingredients.

  • honey
  • soy sauce
  • minced garlic
  • salt
  • pepper

Measure out all your ingredients (measurements are in the recipe card), add them all into a small pot and let simmer for about 5 minutes, over a low heat. All we are looking for is to have the honey melt and blend in with the other ingredients. After 5 minutes, let cool and we are going to prepare the chicken for the marinade.

Place the chicken thighs in the bag or container and then pour the marinade over the thighs. Some people like to trim their chicken thighs, I don’t spend too much time on it. The way I see it, if you can eat skin and bone in thighs, why go through the trouble of trimming the skinless one. The little bit of skin you may have will add some crisp and the fat will never go to waste. It will give you some flavor and keep the thighs moist and tender.

Marinade the thighs for about 2-3 hours, at minimum. Longer is always better, if you can get 5-6 hours on them, that would great. Don’t short yourself though on using this as a weeknight meal. If you can get 2 hours, do it and make this a great busy summer weeknight dinner.

Grilled Barbecue Chicken Thigh Recipe

Moving on from our marinade, time to get the grill going. You can do this on a gas grill or charcoal grill, either one works depending on what you have or prefer, I have both. On weeknights, I might use the gas, easier prep and clean up.

Fire up that grill, regardless of heat source, for about 375°. Set up the grill for some two zone cooking. We are going to start off with some indirect heat and then finish over the flames.

When the grill is up to temperature, remove the chicken from the marinade and place on the grill, starting off with the indirect heat. When we start off with some indirect heat you will ensure tender, juicy chicken thighs. When I grill there is very little I will not start off with as indirect heat these days.

Keep the thighs on the cool zone for about 25-30 minutes. How long you stay on the indirect side will consist of the size of the thighs and well the grill keeps to 375°. You will want to keep the thighs there until they hit an IT of 150°. When you get there, shift over to direct heat. You can keep the grill temperature where it is, no need to crank it up.

Grill the thighs over direct heat for about 4 minutes on each side, this will give you some nice char to them. As you probably know, the safe temperature for chicken is 165°. The beauty of thighs, they can take some higher heat because they have more fat to them then chicken breasts. I have taken chicken thighs upwards of 175° and they were not anywhere close to being dried out.

When they are done, let them rest for about 10 minutes but then you can serve away. If you are like our house, anytime I have a simple meal like this, I will slice the chicken and the kids will come and go, picking away at it, until its gone. This is a perfect and easy way to serve a summer dinner, while hanging outside on the deck or patio.

Ingredients

Instructions

  1. Mix all your marinade ingredients, in a small pot and let simmer over low heat.
  2. Stir on occasion until the honey has melted and mix in with the other ingredients
  3. Let cool for a couple of minutes, then pour into a bag or container. Then add in the chicken thighs.
  4. Let the chicken marinade in the regfrigator for a minimum of 2-3 hours, upwards of 6 hours if you can do it.
  5. Before removing, start the grill and pre-heat the grill until 375°. Set the grill up, regardless of whether its gas or charcoal with a cool zone for indirect heat and a hot zone for direct cooking.
  6. When the grill is ready, remove the chicken from the marinade, place on the grill, on the cool or indirect cooking zone
  7. Leave the chicken there until it reaches an IT of 150°. While cooking indirectly, there is no need to worry about flipping the chicken
  8. When it reaches an IT of 150°, move to direct heat and now grill for about 4 minutes on each side. Before removing you want an IT of at least 165°. Chicken thighs can take an IT upwards of 175°, without any concerns about drying out.
  9. After you remove it, let it rest for about 10 minutes and then you can serve!
